No, you cannot play Fortnite on Xbox 360. As the game is currently not available on Xbox 360 or any other 7th generation of consoles. There are no future developments from Epic as well to make the game available for Xbox 360 in upcoming years.

3. Lack of Live Services
As the Xbox 360 console is 17 years old, all the live servers of Xbox 360 are shutting down each year. Microsoft already took down all the multiplayer servers of Halo and Halo reach.
By 2017, the Multiplayer player fanbase of 360 went down to a global 5%! On top of it, The Xbox 360’s services on the Xbox Network are no longer being updated since we are now two generations over the 360’s console generation.
